One brand, two hotels, two different scales

One is a restored 19th-century Ottoman palace, the other a 65-room historic building in Sultanahmet — the same brand standard, two entirely different operations.

Same standard, two different operations

Both hotels hold to the same brand standard, but their scale and service rhythm are not the same. Daily consumption at a 65-room property in Sultanahmet differs from the palace hotel on the Bosphorus; so do order frequency, batch size and the logic of holding stock. The same product has to be supplied at two different rhythms.

Service inside a historic building

Both operate in historic buildings, and in a historic building storage space is the scarcest resource. That means buying large and stockpiling is not always possible — delivery frequency ends up mattering as much as unit price.

What this demonstrates

That we can supply properties of different scale within one brand, each to its own rhythm. For a hotel group, 'we have two hotels' does not mean twice the order.

Where storage is limited we plan the delivery frequency up front, and order size follows from it.
