Hot chicken: heat dissolves in oil, not in water

In hot chicken the problem is not only grease. The compound that carries the heat dissolves in oil, not in water; a dry napkin does not lift it off the hand, it spreads it. When what is left on the hand reaches an eye or a lip, the complaint is not about the food but about the missing part of the service.

The heat stays on the hand and travels

The compound that carries chilli heat is oil-soluble. A dry napkin does not remove it from the surface; by spreading it, it moves it across more of the hand. When that reaches an eye or a lip, the discomfort comes from the missing part of the service rather than from the food.

The wet wipe is a required part here

With a spicy item eaten by hand, the wet wipe is not a courtesy but what makes the service work. That is why operators hand out more than one per order — and why the large format matters: the heat does not stay on the fingertips.

Hot sauce leaves colour on paper

Hot sauces carry oil in orange and red tones, and on a pale ground that colour looks permanent. Grease darkening the paper is one effect and the sauce leaving colour is another; together they can make a pale napkin read as dirty before it has been used.

Nothing can be missing on a takeaway order

A missing wipe at a table can be asked for. At home it cannot. For an operator selling spicy food to go, having the wipe inside the kit bears directly on whether the food can be eaten. That turns the count from an operational decision into a product decision.

Wipe packaging is inside the regulation too

In France, pre-moistened wipes have been in their own extended producer responsibility chain since 1 July 2025, and Triman plus Info-tri marking is mandatory on the packaging. The marks are part of the print file and need space reserved at the design stage.

Frequently asked

Why is a dry napkin not enough?
The compound carrying the heat is oil-soluble. Dry paper does not lift it off the surface; it spreads it over a wider area.
How many wipes go into one order?
With spicy food one is often not enough. A share of operators treat a second wipe as standard.
Will a hot sauce mark come out of the napkin?
It does not need to on a single-use item, but on a pale ground it looks permanent. A saturated ground does not carry the mark.
